Healthy Herb Salads For A Quick Lunch

Ingredients (serves 2 people)

  • 2 cups (500 mL) fresh basil, chopped
  • 1/2 cup (125 mL) fresh mint, chopped
  • 1 cup (250 mL) fresh parsley, chopped
  • 8 ounces (225 grams) snap peas, sliced lengthwise
  • 1/2 cup (125 mL) red onion, sliced
  • 1/4 cup (50 mL) lemon juice
  • 1/4 cup (50 mL) olive oil
  • 1 tablespoon (15 mL) honey

Directions

  • Mix lemon juice, olive oil and honey thoroughly
  • Toss together basil and next 4 ingredients in a large serving bowl. Drizzle with dressing and toss
